Dear all,
I have just arrived in Kota Kinabalu and I had heard about the local home made wines but somehow I did not get to take down the names. Can anyone help me on this? If possible, please list out the receipes too so I can try to make some for myself.

Hi,
I searched through a few forums and I found there is another name for the home brewed drink. It's called Tuak.
So what's the difference between Tuak and Tapai?

If not mistaken, Tuak is from Sarawak. Both r rice wine. But, i not really sure the difference between Tuak and Tapai. Never try Tuak yet.  _________________

Hi mAtrIx24,
I dunno if you still need to know this, but I found this site explaining about tuak.
Turns out that tuak is a quite mild drink made from palm tree sap, which is fermented over a day or two and then drunk.
I can't give you an exact recipe, but I guess it's just the palm sap with some yeast chucked in. If you want to have a look at the wine fermentation process in more detail, check out my blog, how to make homemade wine.

This is my knowledge about the alcohol drinks of Sabah.
Tapai:
Fermented rice to produce rice wine.
Period of fermentation: About 1 week
Lihing:
Fermented glutanous rice (beras pulut) to produce more 'kick' of rice wine.
Period of fermentation: 4 weeks or more. The longer the better.
Tuak:
it was a coconut 'horn' sap and fermented with some tree element called 'rosok' in kadazandusun.
Also called 'bahar' in kadazandusun.
Additional info:
Tuak in Iban tribe means Lihing in kadazandusun.
Lihing in Iban tribe called 'Langkau'.
Both kadazandusun and iban called the rice wine as 'tapai'.
